During this time of stuffing bellies with turkey, sweet potato casserole, green beans, cranberry sauce and/or your own take on thanksgiving with friends and family, we hope that you all may find rest and joy with loved ones this season!
We are thankful for each of you and your support to our Team and Project! With your help we have been able to reach 63% thus far (almost $10,000!!!). Last week, we were able to bake mesquite oatmeal chocolate chip cookies and hold a bake sale near the engineering buildings. Our cookies were made of mesquite flour that was locally produced and milled in our community, Suchilquitongo, Mexico! Mesquite has a unique flavor that resembles an earthy and sweet blend that is further enhanced when combined with oats and chocolate chips. We used the following ingredients from our recipe by Chef David Lebovitz.
No. of Cookies: ~120
2 1/2 cups (330g) all-purpose or whole-wheat pastry flour
1 cup (100g) mesquite flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon fine sea salt
8 ounces (1 cup, 225g) unsalted butter, cubed, at room temperature
1 cup (200g) granulated sugar
1 cup (180g) packed light brown sugar
3 large eggs, at room temperature
2 teaspoons vanilla extract
2 cups (160g) rolled oats (not instant)
2 cups (360g) coarsely chopped bittersweet or semisweet chocolate, or chocolate chips
After hand mixing the butter and combining all of the ingredients as per recipe, we placed them in the oven at 375 F for 8 minutes, flattened them and then let them bake for another 1-2 minutes. By the way, if you are able to find mesquite flour, these cookies would make excellent desserts for your holiday gatherings!
For our bake sale, we “sold” the cookies at the price of “take what you want, leave want you want”. From your support and donations we were able to raise over $600 and sold out of cookies! We hoped you enjoyed the cookies as much as we enjoyed baking and explaining our project. Thank you for your donations and support!!
Aside from fundraising, we have been finalizing our design and materials for our Polyhouse Solar Dryer! We are looking into current designs and altering them to fit our needs to enhance the drying process for our community. To learn more about our project updates visit our project page!
